What is pica pollo?
- Pica pollo is Dominican fried chicken: small bone-in pieces marinated overnight in sour orange, oregano and garlic, then fried hard to order. The seasoning lives in the marinade rather than in a thick breading, and it is served with tostones or fries and wasakaka.
What is wasakaka?
- Wasakaka is the thin, uncooked Dominican garlic-citrus sauce served with fried chicken: raw garlic, sour orange, parsley and oil. It is poured or dipped, never cooked, and it is our signature sauce.
Where in Miami are you located?
- We are launching in Miami and the location announcement has not been made yet. Join first-batch access and you will get the address in the same message as the opening date.
When do you open?
- No opening date is published yet. The first batch will be announced to the first-batch access list before anywhere else — there is no waiting list fee and no purchase involved in joining.
Why do you sell out?
- Because we fry one batch a day, to order, and we do not hold chicken under a lamp to stretch the day out. When the batch is finished, service is finished and we start again the next day.
What's a drop?
- A drop is a limited release outside the daily batch — a one-off item or a special run, announced in advance with a fixed quantity and no restock. You can sign up per drop to be notified by email when it goes live.
Do you deliver?
- We are starting with our own pickup ordering so the chicken reaches you close to the fryer. Any delivery plans will be announced at launch — nothing is available to order yet.
What does “se acabó” mean?
- It means “it's finished”. It is what you hear at a Dominican picapollo when the batch is gone, and it is what our sold-out screen says instead of pretending there is more.
Who is Gordito Frito?
- The brand is named after the founder's youngest son. He was called gordito from the day he came home, and frito got added because he would not eat anything that had not met hot oil. The family stopped using his real name, and the nickname ended up on the sign.
How do I get first-batch access?
- Join the list with your email on the home page. You get the launch announcement and the first-batch window before it goes public, and you can unsubscribe from any message.
