Tostones — Twice-Fried Green Plantains

What is a tostón?
A tostón is a slice of green — not ripe — plantain that gets fried once until soft, smashed flat, then fried a second time until the edges crisp. Green plantain is starchy rather than sweet, which is why a tostón behaves like a potato and not like a banana.
Eat them immediately
Tostones are salted while hot and go soft if they sit. Ours are smashed and finished per order for that reason, and they are the side we would put next to the pica pollo if you asked us to choose.
